It may not actually be fall according to the calendar yet, but apparently according to food bloggers it is — there are pumpkin recipes everywhere!

Kale Frittata
This was actually a recipe from my Weight Watchers Weekly, and it was good! There was a 2 for 1 deal on kale last week, so I had a lot of kale (hence the kale salad in last week’s Friday Food Porn)
Sautee some onion, garlic, kale, then add 4 eggs & 4 egg whites & 4 ounces feta — finish off in the oven under the broiler.

Flourless Chocolate Pumpkin Muffins
I was totally out of things to give my husband for breakfast!
Not to mention I had some leftover pumpkin that was almost the perfect amount for these muffins. Win-win.
They were very moist; not quite as sweet as I’d like them, despite 6 tbsp of honey — although that’s probably a good thing.

Creamy Pumpkin & Sage Pasta
I don’t know; there was just something lacking in this recipe. I’m not sure what. It’s easy, it’s healthy, but it’s kind of bland.
And it will still fuel my 11 miles tomorrow. Maybe it’s better reheated — some things are like that.

Chocolate Chip Oatmeal Cookie (single serving)
This is a must make! Seriously delicious and not too unhealthy, but they’re definitely dessert, not breakfast. If you want cookies for breakfast, see below.

Breakfast Cookies
I hadn’t made these in a while, but a cool morning prompted me to bust out these breakfast cookies. I mix them up the night before, let them sit in the fridge overnight, and then pan fry them in the morning.
Mmmmmm . . . warm cookies for breakfast.
- 1/2 cup uncooked, quick oats
- 1/2 scoop protein powder
- 2 tsp nut butter
- 1 Tbsp chocolate chips
- 1/2 tbsp peanut butter chips
- Dash cinnamon (I just eyeballed it)
- Pinch salt (I just eyeballed it)
Mix everything together and then add water until the dough sticks together. Form cookies (I get 3-4), cover, and refrigerate overnight.
Pan fry in the morning on low heat about 3-4 minutes per side.
I decided to join Pinterest. Seriously, for years I didn’t get it. I have enough ways to waste time as it is, thank you very much! But then I had an aha moment yesterday: I’m forever forgetting where that recipe I wanted to make came from.
Duh! So I’m Chocolaterunsjudy there, too (as well as on Facebook, and Instagram, and if I ever decide to join Twitter the world might just come to an end. But never say never).

I definitely need to step away from baking for a bit. And since it’s just us, since it’s the middle of the week, it’s bagel & lox and herring (and whitefish for Lloyd).
Somehow I don’t think my weigh in this week is going to show a loss — and I really need one!

Thanks — but until I actually get a period at some point, I doubt it’s happening.
That’s been my pattern: go up, up, up, get a period once every 3 months, then go down.

That’s a bummer. That’s what happened when I stopped having periods…..up about 10 pounds. Boo!

Pumpkin pumpkin pumpkin…..I refuse to eat it until it is really Fall!!! I am in denial (although it is my favorite season)…hanging on to watermelon and mangos for a few more weeks-lol!!
Recipes look yummy though-I will look and experiment with them in a few weeks 🙂

Pumpkin muffins. Yuumy. Can you bake a batch for me and overnight them so I have them for breakfast tomorrow. Too much to ask? 🙂
