It was a hot week, y’all. I’m surprised running went as well as it did, although as of this writing I haven’t yet done my long run is the prediction is 100% chance of rain. Which wouldn’t be so bad, except they’re also predicted thunderstorms. And there’s just no wiggle room with my long run this week.

Purely Twins Chocolate Plaintain Waffles
So the recipe was actually for pancakes. So what? Did you know you can pretty much make waffles out of pancake recipes?
I have to admit I liked the gingerbread plaintain waffles better (see this weekly recap for the link).
Not that there was anything wrong with these waffles. But the cocoa didn’t really seem to make things better. Sacrilege, I know!

No Bake Cakes
This recipe was from an ecookbook I have. I don’t actually remember where I got it, so I can’t give a credit & can’t share the recipe, but I can tell you it was a no bake concoction of bananas, oatmeal, crispy rice cereal, maple syrup, almond butter, cocoa powder, and chocolate chips. Mix all that together, press into muffin cups, and freeze.
I think these will become a staple. Easy, no bake & good! Sorry I don’t have a link for you.

Tempeh Mushroom Bowl
Still working on recipes from My New Roots, and this one was definitely a winner, even if I made a few changes — subbed brown rice for millet, left out the spinach, cooked it slightly differently.
I think it might just be dinner before my long run this week. Well, it was supposed to be, but that ended up being popcorn. Oops.

Watermelon Cucumber Salad
Hot days make you want cool food.
Watermelon Cubes (I didn’t measure)
2 mini cucumbers, sliced
Diced red onion (still didn’t measure)
2 oz feta cheese, crumbled
1 tbsp olive oil
1/2 tbsp balsamic vinegar
I just mixed up everything together in mason jars and put in the refrigerator until ready to eat.
Really tasty and I’m not even a watermelon fan! I’m not sure if it was the balsamic, or just good watermelon, but normally I find watermelon meh and this was very sweet.
