This week was a mix between easy & time intensive recipes.
Yes, I’m still baking plaintains with Purely Twins and still making recipes out of My New Roots (see the blog), even though I’ve already published my review of the cookbook. I made another recipe from it that was very tasty, but I didn’t take photos so I’ll save it for next week. Not a great week for photos — sorry!

Purely Twins Plaintain Cookie Cereal
Never in a million years did I ever think I would actually make my own cereal. I won’t lie; this was time consuming. Yet I’m planning to do it again — maybe even today. And because I had a small plaintain it only made one serving!
I love the fact that you get to control the amount of sugar in your cereal. And it was tasty & satisfying.
I rolled the dough into ropes and just pinched off small pieces — that’s the time consuming part. They have a couple of other methods on the blog, but no matter how you cut it, this one will take some time.

3 Ingredient Pizza Crust
I have made Paleo pizza crust with eggs before. This is easy, it’s tasty, there’s no cauliflower or cheese involved.
Gotta admit I prefer the Purely Twins plaintain pizza crust.
Will I make this again? Maybe.

Carrot, Corn & Chickpea Salad
We grilled last weekend and I had my husband grill a couple extra ears of corn so I could make this salad.
The chickpeas were my addition. I need some protein with my meals!
I liked it, but I liked the other recipe I made from the cookbook even better. Next week, folks.

Primal Blintz
That’s what I’m calling it. On Instagram I called it a crepe that meets a blintz. This takes a few minutes to prep (about 15), although after thinking about that I realized you can do some of that work ahead of time and then it’s a pretty easy breakfast. And packed with protein to keep you full.
I know this sounds weird, but it’s good and I make it often!
1/3 banana
1 egg
2 egg whites
1/4 cup cottage cheese (I like full fat but to each their own)
Blueberries
Cinnamon to taste
- Mash up the banana.
Side note: who doesn’t eat the whole banana? So I had the rest with some peanut butter. And my parents only eat half a banana. Seriously, who does that? - Whisk together the mashed banana, egg & egg whites.
- Pour into a greased pan heated on low (I use a cast iron crepe pan).
- Let it cook about a minute, then put blueberries on one half.
- Sprinkle blueberries with cinnamon.
- Spoon cottage cheese over blueberries.
- Fold over after about 3-4 minutes (bottom should be browned).
- Cook another couple of minutes & enjoy!
So it occurred to me you could get the banana, egg & egg white mixture prepped the night before. Except of course then you’d have the other 2/3 of the banana hanging out there. Well, maybe not.
If you don’t grease the pan (I use a little butter) and you’re not using a nonstick pan (I pretty much don’t anymore), it will most like stick. So it may not look pretty, but it will still taste good. Not saying how I might know that.

These all look delicious! I’ve made my own granola before using a weight watchers recipe and that’s not too time consuming. Like you said, I liked being able to co trol the amount of sugar.

I love that alternative for pizza crust! Cauliflower is so time consuming, but it’s so good. And the cereal recipe is new to me! I haven’t seen anyone do that before! So cool!

I almost never eat cereal. I’m not a fast eater but I am a volume eater. 1 cup? Who eats that?
