There wasn’t a whole lot of cooking/baking going on this week. Getting into the heaviest part of my HM training and a trip to my folks to continue help decluttering their house took a lot out of me.
But in the end, I put my waffle iron to good use.

Healthy 1-Minute Tiramisu Cake
I really love many of Arman’s recipes but this one was just meh to me. But maybe not to you.
I preferred the Brownie Batter Breakfast Bake I made for dinner last night. Because who doesn’t love brownies breakfast for dinner?

Dark Chocolate Rice Cakes
No, I didn’t make these. I suppose it would be easy enough to do. I found them in a local health food store.
I’m not a big fan of rice cakes, and these were good, not great . . . but still, sometimes you want just a little chocolate. And something that won’t cause you to eat the entire package in like one sitting — like the Mary’s Gone Crackers crackers I bought last week.
Yes, I have a problem with crackers. It’s very strange, I’ve really overcome so many of my trigger foods over the years but — but somehow I have trouble stopping with crackers. Even healthy crackers. Weird.
Waffle Cookies & Grilled Cheese
I wasn’t going to bake today. Nope, 10 miles tomorrow and I’m resting up. Not to mention chocolate plaintain cookies, no bake s’mores cookies, no bake granola bars, and plaintain blondies currently reside in my refrigerator.
Could that be why I’m maintaining my weight, instead of losing like I want to? But I digress . . .
I am out of my banana oatmeal cookies, and I had ripe bananas in the fridge, and of course I remembered the post from Blogilates about unusual ways to use your waffle iron.

So I whipped up some of the cookies. Except the directions weren’t clear — they said to put the ingredients in the blender (which I did), but the photo clearly showed unblended oats. The bottom line is I got mini waffles. Kind of plain mini waffles.
And then I had an aha! moment: top them with nut butter. Much better. I think they’ll be breakfast and I’m so totally going to try it with unblended oats.

Then I figured I already had the waffle iron heated . . . haven’t had grilled cheese in forever . . . so I grabbed some Ezekiel bread out of the freezer. Slapped some cheese in there, into the waffle iron, pressed down really hard (I may have been a bit overgenerous with the cheese) and voila!
I didn’t actually make the caprese sandwich. Since all I had was cinnamon raisin bread I think it would have been a little weird. And I have a Belgian waffle iron, not a regular waffle iron. What I don’t have is a pannini maker . . . or do I now?

It’s really good. I microwaved it the first time I made it; this time I baked it in the toaster oven. It was good both ways.

How long is your long run? I’m not sure that would hold me on a double digit run. Maybe. It did fine for last night’s run.

I’ve made waffles using brownie batter. Oh so tasty with strawberries and whipped cream on top.
